Halibut Olympia

The following recipe was shared with us by our close friends, the Linds, and made by none other than Holly L herself! To say that everyone was blown away by this meal is an understatement, it was fantastic! This crusted Halibut Olympia melts in your mouth and is one of our favorite white fish recipes!
INGREDIENTS
1 sweet onion - thinly sliced
1 cup butter
1/2 cup mayo
1/2 cup sour cream
Juice of 1 lemon
1 tsp worcestershire sauce
1 tsp tabasco
1 cup shredded parmesan cheese
1/4 cup dijon mustard
2.5 cups panko breadcrumbs
Fresh finely chopped parsley
4 fillets of halibut
Salt to taste
Pepper to taste
DIRECTIONS
Preheat Oven to 375 degrees F
Brown the Onions. Once they are done browning place on the bottom of a casserole dish.
While onions are browning mix equal parts of mayo and sour cream together. The amount of halibut will dictate the amount of sour cream and mayo.
Add lemon, Worcestershire sauce, and tabasco (to taste) to sour cream/mayo mixture.
Coat halibut in Dijon mustard and season with salt and pepper.
Place fillets in the casserole dish over the browned onions.
Put sour cream/mayo mixture over the fillets.
Sprinkle with parmesan over the top.
To create panko mixture, melt the butter. Mix 1 part panko bread crumbs to 1/2 part butter. Add chopped parsley.
Sprinkle panko mixture over halibut.
Bake until topping is golden brown or about 20 minutes.
Serve and enjoy!
